Hope Fulfilled

Back in May, I posted a blog about one of our apple trees, which was covered in apples, but had also fallen over several times. While we weren’t sure we were going to be able to save it, I am happy to report that we gathered these the apples in the photo above the other day. That’s right, that apple tree that almost didn’t survive gave us a bucket full of apples.

The apples aren’t the prettiest, but we cut into one (had to make sure they were actually ripe before we picked them), and it tasted wonderful.

We weren’t going to pick them as early as we did, but the birds were eating them. We didn’t want to lose another harvest to silly birds, so we gathered as many up as we could the other day. These are all galas.

Unfortunately, our honey crisp apples didn’t make it. The birds and animals did get those. Still, these are plenty to give us some yummy jelly and pie filling for the future. Or just to nibble on. That will be a project for another time. This week is full!

So many times when we wait and wait on something to happen, we’re disappointed. Or it doesn’t turn out as well as we expected. But sometimes, we get a whole bucket of apples.

What’s something you’ve waited for that finally happened? Got any great apple recipes?
